  • In another bowl, mix coriander and pepper
  • Rub vinegar on the meat, then put in a bowl of coriander and pepper

  • Take out and place in a bowl of salt, sugar and bicarbonate of soda for 3 hours
  • After this take out the meat and rub vinegar on it again, then hang to dry

The drying process may take more than 48 hours. Once this is done, your Biltong is ready.
